MEET CHEF EDUARDO DIAZ DE LEON
My passion for cooking began through old, refined Mexican cuisine. Many of my clearest childhood memories come from my grandmother’s kitchen in Guanajuato where the subtle perfumes and vibrant colors of true Mexican cuisine were always present. I understood from an early age that Mexican gastronomy, cultivated over centuries, is infinitely more complex and subtle than simply tacos and tortillas. In fact Anthony Bourdain said in 2016, “it’s the most undervalued, under-appreciated world cuisine with tremendous, tremendous potential.”
I trained at the Dubrelle International Culinary and Hotel Institute of Canada in Vancouver and graduated from the Institute’s Professional Baking and Pastry Program, Professional Culinary Program, Professional Applied Culinary Program and British Columbia Practicum Placement Program. The classical French techniques that I learned enabled me to revisit the sophistication of old Mexican cuisine from a fresh modern perspective, as well as explore the exciting possibilities of contemporary food culture.
