Eduardo Diaz de Leon
Chef Eduardo’s love of food began in his grandmother’s kitchen in Guanajuato, in the agricultural heart of central Mexico. Some of his earliest and happiest memories are filled with the aromas, vibrant colors and flavors of her cooking, and of family coming together around the table.
It was there he discovered the extraordinary depth of Mexican cuisine: centuries of tradition, ingredients and techniques passed from one generation to the next. Cooking alongside the people he loved, he also learned something that still guides him today — food is an expression of love, made to be shared.
For Chef Eduardo, there was never any doubt that food would become his life. That passion took him to Vancouver, where he trained at the Dubrulle International Culinary and Hotel Institute of Canada, honing his skills in French cuisine before exploring the flavors and techniques of Asia, the Middle East and beyond.
His career took him from sous chef to private chef, cooking for everyone from US Presidents and Prime Minister Justin Trudeau to Oprah Winfrey. Along the way, travel became another great influence, opening his eyes to new cultures, ingredients and ways of cooking.
Watching his business-owner dad, Chef Eduardo grew up with an entrepreneurial spirit and a dream of one day creating something of his own.
In 2019, Truckee Food Shop was born — bringing together Chef Eduardo’s love of food, travel and family. And in the Sierra, thousands of miles from where his story began, this lifelong lover of nature and the mountains found a place that truly felt like home.
Today, his cooking brings together his Mexican heritage, classical training and years of culinary exploration with the incredible ingredients grown and raised here in California.
Chef Eduardo describes his style as nomadic — shaped by where he comes from, everywhere he has been and the people he has met along the way. Yet at its heart is the same simple belief he learned all those years ago in his grandmother’s kitchen: good food is made with love and meant to be shared.

As we grow, we’re making room for you to stay a while. Soon you’ll be able to sip and explore wines from our own backyard and from regions around the world, gather with friends, and be part of a community built around the table. We’re still putting the finishing touches on this next chapter, we hope to welcome you in the fall of 2026.

At the heart of Truckee Food Shop is Chef Eduardo’s beloved Aunt Fabi — his mentor, his inspiration and a guiding presence throughout his life.
She taught him that food is an expression of love — something made with care, shared generously and best enjoyed together. Her influence touches everything Chef Eduardo has created here, from the food we make, to the way we welcome people around our table.
Fabi may no longer be with us, but her love, her lessons and her spirit live on in this kitchen and in the food we share. Truckee Food Shop is dedicated to her.
